Fairmont Hotels & Resorts in Alberta Show Support of Local Food + Drink
BANFF AB – Taking place August 6 to August 15, 2021, Alberta on the Plate allows restaurants across the province to showcase the incredible bounty that is grown and produced locally. Four Fairmont properties from across Alberta are celebrating with prix fixe menus, local beverages, and special overnight accommodation options.
Fairmont Hotel Macdonald
Chef Jiju Paul and his culinary team have created a prix fixe menu that highlights local producers and growers to deliver a dining experience that truly is from the farm to the table. The three-course menu boasts Fairmont MAC Garden Tomatoes and Prosciutto with Vital Green Farms Aged Gouda Cheese, Grilled Peach and Housemade Sourdough to start, Alberta Chicken with Taber Corn and Potato Gnocchi as the main, and Fairmont MAC Honey & Vital Green Farms Cream Cheese Crepe Cake to complete the dinner. The tomatoes used are grown in the hotel’s own garden and the honey is from the hotel beehives – it really doesn’t get more local than that.
Those wanting the ultimate local experience can simply take the elevator home after booking the special Alberta on the Plate package. The offer, which includes 15 percent off accommodations and a Chef’s welcome amenity, starts from CAD $229 per night plus tax, based on double occupancy.
Fairmont Banff Springs
Canada’s Castle in the Rockies is also offering a prix fixe menu. Available in the Vermillion Room, guests can expect to enjoy Chilled Fairmont Garden Yellow Beet Bisque with ingredients from the hotel’s garden, Lambtastic Farms “Lambchetta”, and Godsford Farm Maple Tart with gluten-free shortbread crust and Blue Vista Orchards haskap berry ice cream. This three-course menu is available for $65 per person.
To wash it down, the Fairmont Banff Springs bar team has paired Grizzly Paw Evolution IPA and the “Summer Garden” cocktail comprised of the hotel’s own gin with earl grey lillet, St. Germain, simple syrup, and lemon juice. Drinks are available for an additional fee.
Fairmont Jasper Park Lodge
Guests at JPL have the option of an Alberta on the Plate lunch or dinner at the Emerald Lounge. The two-course lunch offers Warm Mushroom Salad of with Goat Cheese Fritters, Pickled Mushroom, and Local Honey followed by Venison Ragout with Mushrooms, Cider, and Herbed Bannock. Dinner offers a two-course option of Fondue Salad of Cider Cheese Sauce, Baked Potatoes, Local Charcuterie, and Pickled Mushroom followed by Pork Tonkatsu made of Local Pork Loin with Schmaltz Rice and Pickled Cabbage. The menus are priced at $25 and $35, respectively.
Each lunch and dinner course also has the option of both a beer and a cocktail pairing. From a Maple Old Fashioned with Banff’s PARK Distillery Maple Rye to Folding Mountain IPA from Hinton, guests are sure to find a palate pleaser with these pairings.
Fairmont Palliser
Hawthorn Dining Room & Bar has created a prix fixe menu featuring Watermelon with Gull Valley Tomato and Burrata, followed by a main course of Pork Katsu from Bear & Flower, and finished with Coconut Penna Cotta, Aerated Lavender Chocolate, and Palliser Hive Honey Sponge Toffee. This three-course menu is priced at $65 plus tax.

The special offer includes dinner for two at Hawthorn Dining Room & Bar with the Alberta on the Plate menu, two glasses of wine or beer, overnight luxury accommodations, and valet parking.
